wonton chips with avocado and corn salsa

  • 6 Serves

  • Cooking time: 10 minutes

INGREDIENTS

  • 3 Avocados (diced)
  • 1 Punnet Cherry tomatoes diced
  • 1/2 Red onion or 1 Shallot minced
  • 400g Can of Corn kernels charred with paprika
  • 1 Bunch of Coriander chopped
  • 1/2 Red Capsicum chopped
  • 1 Packet Tak On Food Products Wonton Wrappers 300g  

  • Neutral cooking oil
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour cream or Greek yoghurt
  • 1 Lime juice and zest
  • 1 Tbs Garlic minced
  • 1 Tbs Chilli flakes (optional)
  • 1 Jalapeno chopped (optional)

COOKING INSTRUCTIONS

  1. Place olive oil in pan and char corn kernels with paprika on low to medium heat.
  2. Mince red onion or shallot, and soak in cold water to reduce harshness.
  3. Dice tomatoes and add salt to remove excess water. 
  4. Combine mayonnaise, sour cream or Greek yoghurt, lime juice and garlic to form creamy dressing.
  5. Combine avocados, tomatoes, red onion or shallots, charred corn, coriander, capsicum and mix well with creamy dressing to form salsa.
  6. Diagonally cut 30 wonton wrappers in half to form triangles.
  7. Deep fry wonton wrappers in neutral cooking oil for 1-2 minutes at 180°C or until golden and place on drying rack.
  8. Plate fried wonton wrappers in large serving bowl and serve with salsa.
